Thomas Klein Intl, working closely with their associate office PS Studio has unveiled the final design that reflects on the name of the restaurant. The fit-out of Butcher’s Den flagship restaurant in Kuwait has already been commenced in the Al Bidaa complex. The outlet incorporates natural materials such as leather, wood and natural stone, blending together elements of the wild and the traditional butcher’s block.
The design of the two-level, 70-seat restaurant spanning 266 square metre, celebrates the food chain – the sourcing, the aging and the carving of quality meat. The design will mirror the ‘brutality’ of the food chain – the primitivism of fire cooking. These elements are mixed with influences of modern art to make a combination.
The restaurant features a wall that pays tribute to Andy Warhol, the celebrated American pop artist. The space will be adorned with Warhol’s famous Cow Wallpaper, designed in 1966. This wall is the first distinctive feature that welcomes the customers upon entry.
A ‘grass wall’, which forms a part of the food chain concept, is featured opposite to this wall. The grass symbolises food for the cows that is then later turned into the food. Paula Palombo, principle of PS Studio, stated that it is also a sustainable feature as a natural air purifier. The restaurant’s 7m-high glass aging room sets a stark contrast to this virtue and beauty of the pastoral, peaceful cow.
The glass enclosure is a room used for the most traditional method of ageing meat, known as dry ageing. The meat will be hung in a controlled refrigerated environment, and the natural ageing process helps in enhancing the meat’s tenderness and flavour.
The upper level of the restaurant features a custom-made conveyor belt displaying a continually moving ‘cow parade’. A collection of 30 porcelain cows painted by a variety of different artists are displayed on the conveyor belt.
The lower level of the restaurant will feature a theatre kitchen giving a finishing touch to the food chain cycle. A private teaching room will also be featured.
