The restaurant that will be named Polpo, will be launched in partnership with Richard Beatty, set to open in early October 2009 on Soho’s Beak Street, in London.

The restaurant aims at creating a cozy and intimate atmosphere with a design that is a cross between a wine bar and restaurant. The restaurant is to be a London interpretation of the bacaros found in Venice. The Polpo restaurant will feature a 55-seat dining room, with a 25-seat private dining area. Polpo will also include a 10-seat bar for guests.

Russell Norman has also acted as general manager of Japanese restaurant Zuma, and has held senior positions at Joe Allen and Circus restaurants.
