The replacement kitchen would be delivered in less than 78 days, and would spread over a total area of 38,350 square feet.
The Naval Academy’s kitchen facility King Hall, which also served as an on-campus galley, required a refurbishment to meet the current standards for serving approximately 14,000 fresh meals to midshipmen each day.
The new modular kitchen center would be located on the East and West Smoke Court on the USNA campus. It features a 14,100 square feet code compliant sprung clear span tension membrane structure, which would have a full utility package.
Kitchens To Go officials said that the facility, which is building- and health-code compliant, is custom designed to be used for several years. A part of this kitchen facility consists of 10 cooking and panning modules, four clam shell griddles, 12 roll-in combi-ovens, six 80-gallon steam kettles, separate bulk and day-issue refrigerators, freezers and dry storage spaces, and two dishwasher modules. The modular kitchen will also include a separate warehouse, receiving area, trash room, chemical storage space and an administrative office complex that includes locker rooms and toilet facilities for the kitchen staff.
Kitchens To Go was hired through the general contractor, Barton Malow, to design and build a temporary kitchen complex on the campus. This temporary kitchen would serve as a substitute galley during the projected 18 months of refurbishment.
